Most western fish recipes include a bit of butter and a bit of lemon. Well, it’s time to get a little more elaborate than that and get on with all sorts of flavor and spice additions that will give your taste buds something to think about for a few days. A Caribbean recipe is not only healthy but also a bit spicy and of course it is delicious as the Caribbean is beautiful.
So here is a simple and easy to prepare recipe that should get you started on Caribbean food, as tourists like to rave about after returning from the island paradise.
Ingredients:
or 4 tilapia fillets
or 2 tablespoons low-fat margarine
or 1/4 cup chopped green bell pepper
or 4 tablespoons chopped onion
or 1/4 cup almonds, toasted and chopped
or 1/2 cup fresh breadcrumbs
or 1/4 teaspoon oregano
or 4 tablespoons fresh lemon juice
or 1 tablespoon chopped cilantro or parsley
or 1/2 teaspoon salt
or 2 cup of water
or 2 garlic cloves, minced
or 1 bay leaf
or 1 teaspoon red pepper flakes
or 1 lime peel
Preparation
o Melt the margarine in a hot skillet over medium heat. Be careful not to let the butter brown.
o Add green bell pepper and 2 tablespoons onion. Saute bell pepper and onion until onion is translucent.
o Add almonds, breadcrumbs, oregano, 1 tablespoon fresh lime juice, cilantro, and salt. Mix everything well.
o Place the stuffing in the center of the tilapia fillets. Roll up both fillets and secure with toothpicks.
o Take a shallow baking pan. Use the 2 tablespoons of onion, water, garlic, bay leaf, red bell pepper, and 3 tablespoons of lime juice.
o Add 2 fillets and bake in 400 F oven for 30-35 minutes basting occasionally until fillets flake easily.
o Remove the tilapia fillets to a serving platter and decorate with strips of lime peel.
This preparation can serve four people.
